Mac and Cheese with Real Breadcrumbs

Mac and Cheese

August 6, 2013

My sister in law introduced this recipe to our family, and my son recently requested it for his birthday dinner. My favorite thing about this dish is the “real” breadcrumbs on top. It’s so worth the extra couple of minute it takes to run some crusty french bread through the food processor or blender. If…

Steak Sandwich with Onion Straws

Best Ever Steak Sandwich

August 1, 2013

Originally, I had set out to make onion straws. The sandwich was just supposed to be a vessel for the onion straws. I had some leftover steak from dinner last night. I also had some really good pretzel slider rolls I found in the Costco bakery section. I added a creamy garlic steak sauce, and…

Grilled Peaches With Yogurt Cream

Grilled Peaches With Yogurt Cream

July 30, 2013

I was introduced to “yogurt cream” on an episode of Pioneer Woman. She made a yogurt cream berry parfait. I’ve had a couple of peaches on my kitchen countertop for a couple of days getting nice and ripe, and decided to grill them to caramelize the sugars and then top them with the yogurt cream….

Green Smoothies

Green Smoothies

July 25, 2013

We do green smoothies almost everyday.  My kids call them salad smoothies, and they love to see how much spinach they can stuff into the blender.  It’s a great way to ease that mommy guilt when you let your kids have popcorn for breakfast. There are so many variations and ways to change it up,…

Balsamic Butter Penne With Roasted Red Peppers

Balsamic Butter Penne With Roasted Red Peppers

July 23, 2013

This pasta recipe has a unique flavor that comes from allowing the balsamic vinegar to reduce.  This mellows and sweetens the flavors, and also thickens the vinegar which allows it to adhere nicely to the penne.  I added some leftover slices of grilled steak to the pasta to make it a little more substantial, but…

Strawberry Mini Trifles

Strawberry Mini Trifles

July 18, 2013

I really can’t even call this one a recipe. It’s not even semi-homemade… It’s just really easy and really good. Costco makes the best pound cake in their bakery. It is sold in a three pack and is called “All Butter Loaf”. And that it is! Layer the pound cake with freshly whipped cream, and…

BBQ Chicken Pizza

BBQ Chicken Pizza

July 11, 2013

This is one of my husband Cory’s favorites… It’s a great way to use up leftover grilled chicken. This pizza crust recipe is my favorite because I always have all the ingredients on hand and I can make it in under five minutes.  It’s not too thin, and not too thick.  Enjoy!

Sun-Dried Tomato Pesto Rotini

Sun-Dried Tomato Pesto Rotini

July 9, 2013

This is a light summery pasta that is perfect for those nights when you just don’t want to turn on the oven, because if your house is even one degree warmer, you might just wither up right there on the kitchen floor. The creamy pesto sauce is very light, so if you like your pasta…

Oreo Ice Cream Cake

Oreo Ice Cream Cake

July 9, 2013

This is a chocolate cake with cookies and cream ice cream. I’ve made an ice cream cake before, but what I like about this one is that you frost the cake and with softened vanilla ice cream mixed with a little milk. So much easier than real frosting.
