Pasta salad is the perfect thing to bring to summer get togethers, picnics and BBQ’s. I love adding tons of fresh vegetables and greens to lighten it up.

This Thai Peanut Pasta Salad could not be easier, thanks to the Trader Joe’s Thai Style Peanut Dressing. In fact, all of the ingredients for this salad can be found at Trader Joe’s.

How to Make This Pasta Salad
You can customize all of your add ins for this salad, but I love to use shredded carrots, baby cucumbers, green onions, and tender greens, like butter lettuce or chopped romaine. You can find shelled edamame in the fresh and frozen section at Trader Joe’s and either one is great.

For the Dressing
Here’s a tip on the dressing for this Thai Peanut Pasta Salad. After you boil the rotini pasta, drain the water, and then add a couple tablespoons of dressing and stir to coat. The warm pasta will absorb all the flavor of the dressing, and the oil in the dressing will keep the pasta from sticking together. If you use frozen edamame, you can add it into the warm pasta to help it thaw faster and to cool down the pasta.

How to Serve
When you are ready to serve this pasta salad, add in the chopped peanuts. You can serve additional dressing on the side so that people can add more to taste. If you want to make this salad even more filling, you could add chicken, shrimp, salmon, or slices of steak. It’s super versatile.

Ingredients
- 8 ounces rotini pasta
- 6 ounces Thai Style Peanut Dressing (divided)
- 1 cup shredded carrots
- 1 cup chopped cucumber
- 1 cup edamame
- 2 cups lettuce
- 1/4 cup thinly sliced green onions
- 1/2 cup chopped salted peanuts
Instructions
- Bring a pot of salted water to a boil and cook rotini pasta according to directions. Drain the water and add 2 tablespoons of the dressing. Toss to coat, and let cool.
- In a large bowl, mix dressed rotini pasta with carrots, cucumber, edamame, lettuce and green onions. Add remaining dressing and mix together. Top with chopped peanuts just before serving.
