No Bake Caramel Corn

While we were spending time with my husband’s family at the cabin last weekend, my mother-in-law made this quick and easy caramel corn.

I love this caramel corn.  I think if I were stranded on a desert island and could only bring one type of food to sustain me until I was rescued, this would be my choice.  Ask me tomorrow and it might be something different, but today, this is it.

This caramel corn comes together in about five minutes and only has four ingredients.  It’s more of a soft, sticky caramel corn compared to the more classic crunchy/toffee like caramel corn that requires baking and stirring and baking and stirring.   This recipe would also work well for making popcorn balls.

If there’s one thing I’ve learned about myself since I’ve starting sharing recipes here, it’s that I have a strong need for caramel in my life (as evidenced by this and this and this).

So perfect for when you need a quick treat to munch on but don’t want to go to a whole lot of trouble to get it.

Description

This quick and easy no bake caramel corn is soft, sticky, and uh-may-zing!


Ingredients

Scale
  • 1/2 cup butter
  • 1/2 cup brown sugar
  • 10 large marshmallows
  • 12 cups popcorn, popped

Instructions

  1. In a medium saucepan, melt butter over medium heat. Add brown sugar and marshmallows and stir continuously until marshmallows are melted.
  2. In a large bowl, pour caramel over popcorn and mix to coat. Let it cool for just a minute. Tastes amazing served warm!
