Summer Fruit Salad

I really do love how the warmer weather brings a vibrant show of colorful fruit to the table.  A simple Summer Fruit Salad is the perfect side for any occasion!  I love this version with a Coconut Lime Yogurt topping.  Let me tell you how I made it!

To make the Coconut Lime Yogurt topping, we started with freshly squeezed lime juice and zest.  Then I dissolved three packets of Born Sweet Zing™ Organic Stevia Sweetener – Zero Calorie to add just a touch of sweetness.  Before mixing it with plain yogurt I add a splash of coconut extract.  So delicious!

I like using Born Sweet Zing because it has zero calories, a clean sweet taste, and it dissolves easily.  I’ve used it in my daily green smoothies and my evening cup of tea also.  You can even keep a few packets in your purse so you can add it to beverages on the go!  Just for reference, one packet equals the sweetness in two teaspoons of sugar.

This fruit salad would make a wonderful side dish at a Sunday brunch, or with a nice big platter of grilled chicken for a backyard BBQ.  You can make everything ahead of time and keep it in the fridge until you are ready to serve.  Just pour off any excess juice from the fruit.

Since fruit salad is naturally so colorful and beautiful, it pretty much decorates itself!  Individual glass serving bowls are a nice way to show off all the colors.  After topping each serving with the Coconut Lime Yogurt, you can use fresh mint leaves or extra lime zest as a garnish.  These would be perfect for a Mother’s Day Brunch!

For the Coconut Lime Yogurt Topping

  • 1 tablespoon freshly squeezed lime juice
  • zest of 1/2 a lime
  • 3 packets Born Sweet Zing
  • 1/4 teaspoon coconut
  • 3/4 cups plain yogurt

For the Summer Fruit Salad

  • 1 cantelope, scooped into balls
  • 1 cup strawberry halves
  • 2 kiwi fruits, peeled and sliced
  • 1 cup pineapple chunks

Instructions

For the Coconut Lime Yogurt Topping

  1. In a small bowl, mix lime juice and lime zest with Born Sweet Zing until dissolved. Stir in yogurt. Garnish with additional lime zest if desired.

For the Summer Fruit Salad

  1. Add all of the fruit to a large bowl and mix. Scoop into individual bowls and top with Coconut Lime Yogurt.
