Many times, when someone finds out that I am a food blogger, they ask me if my blog has healthy recipes. I’m never really sure what to say because healthy is such a relative term. They might ask if I do certain types of recipes, like gluten-free or Paleo. I also have a lot of comments asking for the calorie counts for certain recipes.
The truth is that the recipes on this blog are simply what I’m feeding myself and my family. If a way of eating has a name, I don’t do it. Food. We eat food. Simple, delicious, sometimes healthy, sometimes indulgent, food. We eat together, we eat what we enjoy, and we try new things. We eat when we are hungry and we stop when we are full. We eat to give our bodies energy to do the things we love. We are mindful that the food we have is a gift, and that we are blessed to have such abundance.
Diet trends come and go. In the past I’ve tried limiting myself to eating only certain types of foods, and I always end up craving the ones I have excluded. One day the experts say something is good for you, and the next day it’s poison. Ain’t nobody got time for that, amen? Everyone should eat in a way that makes them feel the best overall. To each his own, but for us, we just eat food.

These little energy bites are perfect for so many things. They could be breakfast, snack, lunch, or dessert. I’ve been enjoying a couple of them with a thinly sliced Honeycrisp apple for lunch, and they are super convenient, filling, and so easy to make.

No Bake Energy Bites

Description
Conveniently bite-sized snack packed with natural nut butter, oats, honey, and raisins.
Ingredients
- 1/2 cup raw unsalted almonds
- 1/2 cup old fashioned oats
- 1/8 teaspoon salt
- 1/3 cup natural nut butter (I used NuttZo)
- 1 tablespoon coconut oil
- 1 tablespoon honey
- 1/2 cup raisins
- 1/3 cup semisweet or dark chocolate chips, melted
Instructions
- In a blender of food process, process almonds very finely. Repeat with the oats. Pour the almond and oats into a large bowl. Mix in the salt and set aside.
- Process the raisins in the blender or food process a paste forms, scraping down the sides as needed.
- Add the raisin paste, nut butter, coconut oil, and honey into the bowl with the almonds and oats and mix well. You may find it easier to use your hands.
- Using a spring loaded scoop, form the mixture into 12 1-inch balls. Set them on a parchment paper lined baking sheet.
- Melt the chocolate chips in the microwave (about 30 seconds) and stir until smooth. Pour the chocolate into a plastic zip top bag and cut a tiny bit of one corner off. Drizzle the melted chocolate over each energy bite. Store in a covered container and refrigerate.
Notes
*Instead of drizzling chocolate, you can process an extra 1/4 cup almonds and roll the energy bite in the almonds before chilling.

Julie, yes. Yes. Yes. Your children are so so lucky to have you sharing that amazing ideology about food with them. The way you think about food is totally why I read this blog, and your blog oozes that very way. Those words are so encouraging to read, but I can tell you that you wouldn’t even need to say them. Your blog is a testament of that way of thinking. You know what’s funny is when I read about people asking for calorie count I thought “ain’t nobody got time for that”, and then you said that very same thing. Haha. Please keep posting what you do. Your blog is seriously one of the best. Not all food bloggers are created equal, but I think yours is one that more people should read.
