I’m finding it a little ironic that I’m sharing my Tropical Sunshine Smoothie with you today and here’s why… I just bought a Christmas tree.

Our old one had been knocked over so many times (thank you Little Boy #3) that it would no longer stand up straight.  So last year I thought I would get a really good deal on a new tree after Christmas, but then when I went to look for one I didn’t really love what was left.  So I vowed that when Christmas trees go on sale in the Fall, I would snatch one up.  Except that they are on sale now and it’s only August.  I felt so torn… I hate that the stores put out the Christmas stuff so early.  Don’t they know that Christmas isn’t Christmas if it happens every day?  I even confessed my guilt to the checkout girl.  She said not to worry about it, they will much harder to come by later in the year.  Thanks, but still feeling guilty.

So since it is STILL SUMMER, I will happily change the subject and tell you all about my new favorite smoothie.  If you didn’t get to take a tropical vacation this year, well, this is the next best thing.  We’ve got mangos, pineapple, bananas, orange juice and a little taste of coconut.  And don’t worry if you don’t care for mangos in real life.  Mangos and smoothies just really work out, I promise!

I’m always making my smoothies all willy nilly with what I have on hand, but I love this smoothie so much that I decided to actually measure the ingredients and write it down so I could share it with you.  Love what a tiny bit of coconut extract does!  I also usually add a couple of handfuls of baby spinach, but left it out for the pics so it would look a little more sunny. Enjoy!

Description

So healthy and refreshing, the next best thing to a tropical island getaway!


Ingredients

Scale
  • 2 cups frozen mango cubes
  • 1 cup frozen pineapple chunks
  • 1 ripe banana
  • 1/4 cup orange juice
  • 1 cup water
  • 1/4 cup plain Greek yogurt
  • 1/4 teaspoon coconut extract

Instructions

  1. Add all the ingredients to your blender and blend until smooth. Add more orange juice and/or water if too thick to blend. Different blenders may require more or less liquid.

    Mango smoothies are my favorite! I’ve never tried coconut extract in it though. Sounds delish!

    And good to know that Christmas trees are on sale! haha! My husband and I have been married 4 years and still don’t have one so maybe we’ll have to join you in buying Christmas stuff in the summer.

    I still cannot believe Christmas stuff is out already! I’m happy for you that you found a tree though! This smoothie looks amazing. It makes me wish I was at the beach again..sigh.

      I tried this but substituted some of the pineapple for strawberries and couldn’t use coconut extract but it came out great, I just recommend using a little less of the liquids if you like thicker smoothies like I do
