Salted Caramel Rice Krispie Treats

When someone asks you if you’ve ever had Salted Caramel Rice Krispie Treats and you realize you never have, you make two batches in two days, share them with everyone, and hurry to share the recipe!

Friends, I think I’d love any-old fashioned rice krispie treats recipe. One bite takes me right back to my childhood! But adding a buttery, salty dimension to the classic recipe takes them over the top!

These Salted Caramel Rice Krispie Treats are still easy to make with ingredients you probably have on hand. Where you would normally just melt butter and add marshmallows, we whip up a quick homemade caramel sauce by adding brown sugar, corn syrup, and heavy cream to that melted butter. Once the caramel comes together, turn off the heat and let the marshmallows melt in. It’s that easy! You are going to LOVE these!

I made these with one bag of marshmallows and 7 cups of Rice Krispies in a 9 by 9 inch baking pan and the ratio was just right. I always try to make them a bit more marshmallowy.

This is the perfect time to break out the good quality finishing salt. I love to use Maldon sea salt. One box will last you a good long while! The texture is light and flakey, and I love the way the saltiness balances out the sweetness in this recipe.

Description

These Salted Caramel Rice Krispie Treats are just like the classic favorite but with an added buttery, salty caramel sauce that makes them totally amazing!


Ingredients

Scale
  • 7 cups Rice Krispie cereal
  • 1/2 cup butter, salted
  • 1/2 cup brown sugar, packed
  • 1/4 cup heavy cream
  • 1 tablespoon corn syrup
  • 1/2 teaspoon flaky sea salt such as Maldon (or 1/4 teaspoon table salt), plus more for sprinkling
  • 12-ounce bag regular marshmallows

Instructions

  1. Prepare a 9 by 9 inch square baking dish by spraying with nonstick spray, or buttering well. Measure out 7 cups of cereal and set aside.
  2. In a large saucepan, melt butter over medium high heat.  Add brown sugar, heavy cream, and corn syrup and bring to a boil while stirring constantly.  Cook until the mixture thickens, or about 5 minutes.
  3. Stir in the salt, and remove from the heat.  Stir in the marshmallows until completely melted.
  4. Combine the cereal and the marshmallow mixture and stir together until completely combined.  Pour into the prepared baking dish and press to level.  I like to rub my hands with nonstick spray so the mixture doesn’t stick to them.  Sprinkle with additional flakey sea salt to taste.
  5. Allow the Salted Caramel Rice Krispie Treats to cool completely and then cut into 16 bars.  Store in an airtight container at room temperature.

    These r.k.treats are the very best of the best. I did exactly what you said, I made them and then turned myself right around and made two more batches, one for family and one for work. I am now Employee of The Year! Just kidding about that but every morsel was eaten. I almost enjoyed watching folks eat them, and the reaction, as much as eating them myself. I love the Maldon Sea Salt and added more than called for. I put a shallow layer in the pan. Sprinkled salt over that, then added the rest of the marshmallow mixture and added another sprinkling of salt on the top. I’ve done this on all the batches and everyone gives a thumbs up. My daughter had previously tried to vary the recipe by adding different types of bourbon and flavored rums. While they were different and tasty, nothing holds a candle to the caramel and sea salt. This is a recipe that will be a treasure and a pleasure to share. Thank you for sharing it with us.

    Added 1 chopped apple into the mix and a very light drizzle of caramel syrup on top. Turned out delicious, not a morsel left. Keeping this recipe!
