Lunch is served my friends. And she’s a beaut. My Power Veggie Sandwich is none other than Dave’s Killer Bread Thin-Sliced 21 Whole Grains and Seeds bread with a generous smear of roasted garlic hummus and a pile of avocado, cucumber, red pepper, carrots and micro greens. If this doesn’t get you through a busy day, nothing will.
I think most of us are sincerely trying to get more veggies in, but let’s face it, they don’t always fill you up for long. With only 60 calories per slice, this bread is packed with protein, fiber, omega-3’s and whole grains. I love the seedy texture and taste. I know you already know this, but it’s my favorite bread and I eat it every. single. day. This is the kind of bread that makes you want to be a better person… okay, too far? Just take my word on it, it’s good and it’s good for you!
Of course you can customize this Power Veggie Sandwich to your liking, and depending on what’s in season and available to you. Just pile it high and make it as colorful and messy as you can!

Description
A colorful and power packed sandwich with a generous smear of roasted garlic hummus, and a pile of avocado, cucumber, red pepper, carrots and micro greens.
Ingredients
- 2 slices Dave’s Killer Bread Thin-Sliced 21 Whole Grains and Seeds
- 2 tablespoons hummus (I used roasted garlic flavored)
- 1/4 cup micro greens
- 6 slices cucumber
- 1/4 red pepper, sliced thinly
- 1/4 avocado, peeled and sliced
- 1/4 cup shredded carrots
- a few lettuce leaves
Instructions
- Spread hummus on top of two slices of bread. Top with micro greens, cucumber, red pepper, avocado, carrots and lettuce.

Dave’s Killer Bread is NOT 60 calories a slice. The package says a serving is one slice and one slice is 120 calories. It is good, though…….

Hi Nancy! I actually used the “thin slice” Daves Killer Bread which is 60 calories per slice. You are correct about the regular bread though. Glad you like it too!

I would love to know how avocado can be halves (save for later?) and sliced ahead of time to make a sandwich as pictured. I have tried everything I have ever read about keeping avocado from turning color, and I have yet to find any satisfactory way to do this.

Hi Carolyn, I have found that rubbing the outer surface of the avocado with a lemon or lime slice does help with the browning. I’ve also had to tell myself that a browned avocado doesn’t really taste any different, but is just not as pleasing aesthetically 🙂

I was not concerned just with aesthetics, but I have always thought that browned food (oxidation) was not a very healthy alternative. Lemon juice does not seem to work for me because I almost always squeeze lemon juice on the portion I am eating. Even that will brown quickly if I need to leave my plate for even a short time. With all that, I eat an avocado almost every day. Thank you for your reply.

We found two steps to curb avocado from browning. We use the peal end flattened it a bit to use as a cap after slicing the amount needed Then we store in a zip Lock in the vegetable drawer
of all measures we tried this works remarkably well

I have been wrapping my cut avacado with a saran wrap. I use the Kirkland brand and it keeps good for 2-3 days. Have been doing it for multiple years. It stays fresh.

Another great tip for keeping a halved avocado is to keep the skin from the half you scoop out and close the avocado up wit it, wrap it in Saran Wrap and put it in a tightly closed container. ( I use a glass one with a sealed lid). It usually lasts up to 3 days without turning. 😊

What ?? No poop on!? Oh that was bad. What? No smidge of ground mustard? lol I used to buy this years ago at a health grocery, store, deli in the 90’s. Never forgot them and just recently took the initiative to see if I could make one by memory. I came close. I’d remembered the mustard and thick slice of muenster from the past ones I ate. I don’t know that they used avocado. Maybe. Very thin sliced tomato too. I was trying to remember if they used shredded or whole leaf lettuce. In any case it was good and I can experiment with the general template. And of course the multigrain bread with the seeds. Coincidentally I hadn’t remembered humus but I happened to have some roasted garlic in the fridge and said, Why Not?

I varied my powerhouse sandwich from your recipe by using lactose free cream cheese instead of hummus and Muenster cheese with sprouts and a nice slice of tomato. It reminded me of the powerhouse sandwiches at the health food store, The Health Concern near my college eons ago.
