This homemade Brown Sugar and Cinnamon Coffee Creamer is a beautiful thing to wake up to. As the days get shorter and the mornings are dark and chilly, crawling out of a warm bed takes some convincing. A good cup of coffee waiting for you on the other side makes starting the day easier! I love having a big jar of this homemade creamer in the fridge. I usually have one or two cups of coffee each day, and I wouldn’t dream of drinking it black. No bean water for me, thanks!
Without being all pumpkin spice and everything nice, this Brown Sugar and Cinnamon Coffee Creamer still screams fall but offers a softer, maybe less cliche, type of fall flavor. It’s very easy to make, and you might even already have everything you need. Just make a brown sugar simple syrup by dissolving equal parts brown sugar and water on the stovetop. There is no need to bring it to a boil, just make sure there is no grittiness from sugar crystals in the syrup. Stir in cinnamon and salt, then remove it from the heat. Lastly, add heavy cream and vanilla extract. You are ready to brew!
This homemade creamer will be perfect in drip coffee, but it also works really well for flavoring a latte. We just bought ourselves a new fancy espresso machine, and so I’ve been playing barista for anyone who will let me. I did work at Starbucks when I was in high school, so maybe it makes me feel a little nostalgic seeing those tiny espresso glasses!
You can keep the creamer refrigerated for about two weeks, though mine does not last that long. I usually add 2-4 tablespoons of homemade creamer to my coffee, depending on the strength of my brew. Be sure to store the creamer in a container or jar with a lid so that you can give it a good shake before using it. The cinnamon will tend to settle to the bottom.
This would make such a wonderful little “Happy Fall” gift for a friend. A sweet little jar of homemade creamer, a new mug for fall, and a little package of biscotti would really brighten someone’s day. Just add coffee!
I love dusting the top of my latte foam with cinnamon and sugar. It tastes like a churro-flavored latte, and I’m so here for it!
I’m so glad we’ve made it through the summer and can enjoy cooler mornings and time spent outside. A warm cup of coffee with my favorite flavors is the perfect way to celebrate. Take the time to make part of your everyday morning routine just a little sweeter!

Tastes delicious but when I add it to my coffee it curdles every time 😞what is going wrong. I know it’s not the cream because I tried the cream by itself and its fine.
Allison Isley says
Janet-I find if I heat my cream with the brown sugar and water (or I use milk) that doesn’t happen. Yummy creamer, huh?! 😋
Kay Sahinen says

I followed your recipe and ended up with a great-tasting coffee creamer. The one question I have is: did your creamer become very thick? Mine did and I don’t understand why.
Melissa says
YES! I used 3 cups of the cream and it was perfect!

Could I use half in half instead of heavy cream? Looks yummy.
Tiffany C says
Hello! I want to try this, but, Is the salt necessary?
Julie says
Hi – The salt just enhances the other flavors. You may leave it out if you prefer.
Lucy says
Can I use milk instead of water and dk brown sugar instead of light brown
Julie Moths says
EXCELLENT! I might even stop buying Starbucks creamer. Mine was a little too watery, my frothier didn’t want to froth it enough to get that foam layer. Next time I’ll make it with milk instead of water. Thanks for sharing!
