I’ve been dealing with some major mommy guilt. You know that feeling all you moms out there? It all started when Little Boy #1 opened up one of the cabinets where I keep all our photo books. Pretty soon we were all gathered round the couch looking at pictures of him as a baby, family vacations and Christmas of 2007. We were laughing at all the captions I’d written in the books about the cute things he used to do, like how he used to play peek-a-boo by covering up his ears instead of his eyes. Adorable, right?
So much baby cuteness jumping off the page at me. My ovaries were doing cartwheels, folks. Why God chose me, of all the people in the world, to be the mother of the three cutest boys He ever made, I do not know. Who am I to question it, so I just accept it with open arms.
And I couldn’t believe how meticulously I’d kept track of all his firsts! First time daddy changed my diaper? First time out of the house? First time hand to mouth? Are you kidding me?
Then Little Boy #2 (the super observant, overly emotional, sensitive one who likes things EVEN and FAIR) asks where his book of baby pictures was. So I showed him the one I had put together for him. He also loved looking at all the pictures of him as a baby. But he wondered why he only had one book, when Little Boy #1 had three books. And also, why his was just pictures, when Little Boy #1 had funny stories and captions for each picture. And then he asked where Little Boy #3’s book was?
Uh-oh. Mommy fail. My baby is three, and no baby book…
So I started explaining to him that Shutterfly had sent me coupon codes for free books when Little Boy #1 was a baby so that’s why he had more than one book dedicated just to him. And when I made Little Boy #2’s book, I was trying to get it done late at night before a certain promotion would expire, so that’s why there’s no words in it. And just so you know, I’ve got a little folder on the computer I’ve been trying to collect photos for Little Boy #3’s book which I plan to put together and order very soon…
I’m calling it, The Evolution of the Baby Book. It’s the completely stereotypical but seemingly unavoidable phenomenon that occurs when a mom has three baby boys in four years. She swears she won’t do it, but it happens anyway.
Maybe these Coconut Oil Rice Krispie Treats will make us all feel better. Perfect ratio of marshmallow to Rice Krispie, and sprinkled with tiny colored flecks of happiness and joy. You’ll love the way they taste with coconut oil substituted for half of the butter because they taste just like they are made with all butter (or better)! Great way to sneak in some good for you fat. Yes, I know these are not exactly healthy… But they are healthier, right?
And this recipe makes a very large batch, which I recently brought to my son’s end of season soccer party. They were devoured… kids love sprinkles! But you can easily cut it in half if you don’t want to make so many.

Description
These Coconut Oil Rice Krispie Treats taste just like the ones you loved as a kid! Great way to sneak in some of that good for you kind of fat.
Ingredients
- 4 tablespoons butter
- 4 tablespoons coconut oil
- 2 bags (10.5 ounces each) miniature marshmallows
- 12–13 cups Rice Krispies Cereal (depending on how sticky you like it)
- sprinkles
Instructions
- Prepare a half sheet baking pan by lining with parchment paper and spraying with nonstick spray.
- In a large pot, melt butter and coconut oil over medium heat.
- Add marshmallows and stir constantly until the marshmallows are all melted.
- Remove from heat and stir in Rice Krispie cereal they are evenly coated with the marshmallow mixture.
- Pour into half sheet pan and spread into an even layer.
- Top with sprinkles and allow to cool before cutting.

These look amazing Julie!! I love the “colored flecks of happiness and joy” ๐ And don’t even get me STARTED on mommy photo guilt. I don’t have ANY books done for either of my kids, even though my mother in law bought me a whole project life book thing. I’m not into scrapbooking, at all, so it doesn’t even interest me, which I feel horrible about. My kids are going to hate me someday when they realize there is absolutely no documentation of their lives besides instagram.

Hi Rachel, thanks for your question. I haven’t tested this out, but I think it would be fine to just sub the same amount of coconut oil for the butter in the recipe to make it dairy free. So you would do 8 tablespoons of coconut oil, or 1/2 cup. Hope you enjoy!
