Copycat Sprouts Date Coffee Smoothie

Did you know some Sprouts grocery store deli’s make Date Coffee Smoothies? I saw an Instagram reel review and really wanted to try one, but my Sprouts doesn’t offer them yet. No big deal, I’ll make my own! These Coffee Date Smoothies are so creamy and delicious. They are sweetened with dates, and have lots of protein and fiber. The almond butter adds the best flavor, and keeps me full. I hadn’t really thought about sharing the recipe here, but when I couldn’t stop making them for myself I decided you needed to know how to make them too!

Start by brewing two shots of espresso. If you let it cool for a little bit so that it doesn’t melt the ice, your smoothie will be thicker.

Add ice cubes, milk of choice (I use Fairlife whole milk), espresso, Medjool dates with the pits removed, almond butter, and a generous pinch of salt. Blend on high speed until smooth and creamy. Then add the vanilla protein powder and blend on low until just incorporated. This is optional, but I find that if I blend the protein powder on high speed it gets too frothy.

This Date Coffee Smoothie is great as an afternoon pick me up, or sometimes I bring it with me first thing in the morning for easy an on-the-go breakfast. I love that the ingredients are full of good nutrients and I’m telling you, that spoonful of almond butter really is key! It has healthy fats that help emulsify the rest of the ingredients in the smoothie. It rounds out the caramel like flavor of the dates and the acidity of the espresso. The end result is a sweet, smooth, balanced coffee flavor.

No need to wait in line at Sprouts and spend $7 when you can buy all the ingredients and make one for yourself whenever you like. Make a double batch and give one to a friend and they will be hooked too!

I buy organic dates at Costco, and prefer the ones that still have the pit in them. They are easy to remove right before using and I feel like they have a better texture than the ones that have the pits removed. I store them in the fridge so they last longer.

Ingredients

  • 2 cups ice
  • 3/4 cups milk
  • 2 shots espresso
  • 3 dates, pitted
  • 2 tablespoons almond butter
  • pinch of salt
  • 1 scoop vanilla protein powder

Instructions

  1. Add ice, milk, espresso, dates, almond butter, and salt to the pitcher of a blender. Blend until smooth and creamy on high power. Add extra milk if too thick.
  2. Add vanilla protein powder and blend on low until incorporated.
