Layers of coconut yogurt, strawberries, oranges, and toasted coconut!
Ingredients

- 1 cup coconut flavored Greek yogurt
- 2 tablespoons chia seeds
- 2 tablespoons milk
- 1/2 cup sliced strawberries
- 1 orange, peeled and segmented
- 2 tablespoons toasted coconut flakes
Instructions
- Stir milk and chia seeds into yogurt. Cover and refrigerate for at least 2 hours or overnight.
- When ready to assemble, layer strawberries, half the yogurt, oranges, and the other half of the yogurt. Sprinkle with toasted coconut.
Notes
To toast coconut, spread a thin layer on a baking sheet. Bake at 350 degrees for 5-8 minutes, watching closely for it to turn golden brown. I like to toast a big batch to have on hand for topping yogurt, fruit, oatmeal or ice cream.
