Description

Nothing fancy, just really, really good Christmas Oatmeal Cookies. Easy to make with only five ingredients.

Ingredients

Scale
  • 1 cup (2 sticks) butter, softened
  • 1/2 cup sugar
  • 1 cup flour
  • 1 tsp. vanilla
  • 1 1/2 cup quick oats

Instructions

  1. Preheat oven to 350 degrees.
  2. Cream butter and sugar together in the bowl of an electric mixer. Add vanilla, then flour and oatmeal.
  3. Drop 1 inch balls onto cookie sheet and flatten. You can do this by hand, or with the bottom of a glass (spray with nonstick spray).
  4. Bake at 350 degrees for 12-15 minutes or until the edges are golden brown.
  5. Remove them from the oven and allow to cool for a few minutes on the baking sheet, then transfer to a cooling rack.
  6. Dust with powdered sugar.

Notes

*If you don’t have quick oats, you can pulse old fashioned oats in the blender or food processor a few times.
