I can remember a time when I was just starting to be interested in baking and trying to plan out a special dinner that I could handle on my own. I really wanted to make homemade rolls, but as I was searching this new found wonder called THE INTERNET, all the roll recipes I could find had yeast in them. Not only did I not have any yeast in the house, but I was completely intimidated at the idea of working with something I imagined to be very temperamental.
After realizing that yeast can be a crucial part of the bread and roll making process, I decided to stop avoiding it and just see what it was all about. I can still remember the first time I added water to the contents of that tiny little packet. The smell reminded me of walking into my favorite bakery. I’ve since learned that as long as you play by the rules, yeast is such a great helper in the kitchen and with it you can do some really great things. Like Apple Cinnamon Pull Apart Bread!
This is a recipe from Fleischmann’s® Yeast that I put my own twist on, incorporating a grated Granny Smith apple and a pretty crazy amazing apple cider glaze. Everyone loves this fun and tasty pull apart bread! It’s a total crowd pleaser for sure. And it’s a great place to start if you are just beginning to work with yeast. After combining the flour, yeast, sugar, and salt in the bowl of an electric mixer, warm up the milk, water and butter in the microwave. You want to keep your liquid ingredients in the range of 120-130 degrees. If you want to be precise you can use a thermometer, but if you think of the temperature of a warm bath, you’ll get it just right for the yeast.
After adding the liquid ingredients plus the egg and apples to the mixing bowl, gradually add the rest of the flour, mixing and scraping the sides as you go. When the dough comes together, the next step is to knead it. This process is simply pressing the dough out with the heels of your palms, folding it over, and repeating. It’s an important step because it makes the dough more elastic and less sticky. As I was making this recipe for the first time, I found Fleischmans’s® Bread World to be a valuable resource. It’s full of step by step recipes for beginning to advanced bakers with helpful pictures and tips. It is very well layed out and easy to find what you are looking for. I could spend hours just browsing around there! If you are interested in learning to bake with yeast, I highly encourage you to check it out. You will definitely be inspired! One of the tips I found there is that you know it’s time to stop kneading your bread when it springs back after your press two fingers into it.
After you have kneaded your dough, it’s time to place it bowl and let it rest. This is a good time to mix up your filling, which is just sugar, cinnamon and allspice. Divide the dough into about 36 pieces, and roll them into a ball. Dip each one into melted butter and then into the filling and place them in a greased fluted tube pan. If you have little ones nearby, this is a good time to wash their little hands and put them to work. Just like play dough! Once you have everything rolled and coated, cover the pan with a towel and let it rise in a warm place. If you have a bread proof setting on your oven, this is perfect.

Now it’s time to turn the pan out onto a plate and whisk together the apple cider glaze. Oh man, I think this is my favorite part!

Ingredients
For the Dough
- 3–1/4 to 3-3/4 cups all-purpose flour
- 1/4 cup sugar
- 1 packet Fleischmann’s® RapidRise Yeast
- 1 teaspoon salt
- 3/4 cup milk (whole, 2%, 1% OR skim)
- 1/4 cup water
- 1/4 cup butter OR margarine
- 1 egg
- 1 heaping cup peeled, grated apple
For the Filling
- 1 cup sugar
- 1 tablespoon Spice Islands® Ground Saigon Cinnamon
- 1/2 teaspoon Spice Islands® Ground Allspice
- 1/2 cup butter OR margarine, melted
For the Apple Cider Glaze
- 2 tablespoons butter
- 1/3 cup apple cider
- 1 tablespoon heavy cream
- 1/8 teaspoon salt
- 2 1/2 cups powdered sugar
Instructions
- Combine 2 cups flour, sugar, dry yeast and salt in a large mixer bowl and stir until blended. Combine milk, water and butter in a microwave-safe bowl. Microwave on HIGH in 15 second increments until very warm but not hot to the touch (120° to 130°F. Butter won’t melt completely). Add to flour mixture with egg. Fold in grated apple.
- Beat 2 minutes at medium speed of electric mixer, scraping bowl occasionally. Add 1 cup flour; beat 2 minutes at high speed, scraping bowl occasionally. Stir in just enough remaining flour so that the dough will form into a ball.
- Knead on lightly floured surface until smooth and elastic and dough springs back when lightly pressed with 2 fingers, about 6 to 8 minutes. Cover with a towel; let rest for 10 minutes.
- For filling, combine sugar, cinnamon, and allspice in a shallow bowl.
- Cut dough into 36 pieces. Dip each piece into the melted butter and then roll in the cinnamon sugar mixture. Place in fluted tube pan that has been generously sprayed with cooking spray. Combine any remaining butter and sugar and drizzle over rolls. Cover with towel; let rise in warm place until doubled in size, about 45 minutes .
- Bake in preheated 375ºF oven for 25 to 30 minutes or until rolls are golden brown. Cool 5 minutes in pan, then invert on serving plate.
For the Apple Cider Glaze
- In a small saucepan, melt butter over medium heat. Whisk in apple cider, heavy cream, and salt. Bring the mixture to a gentle simmer, and then remove from the heat. Whisk in powdered sugar. Allow to cool slightly before pouring over the pull apart bread.
