Description

My mom’s peanut brittle recipe – you can make it in the microwave in less than 10 minutes!


Ingredients

Scale
  • 1 cup sugar
  • 1/2 cup light corn syrup
  • 1 cup raw peanuts
  • 1/2 teaspoon salt
  • 1 teaspoon butter
  • 1 teaspoon vanilla extract
  • 1 teaspoon baking soda

Instructions

  1. Pour sugar and corn syrup into a microwavable 1 1/2 quart casserole dish. Mix together and microwave on high for 3 minutes.
  2. Stir in peanuts and salt, and microwave for 3 more minutes.
  3. Add butter and vanilla, and stir well. Return to the microwave for 2 more minutes.
  4. Carefully remove the pan from the microwave, and add baking soda, stirring quickly.
  5. Pour out onto a Silpat lined or greased baking sheet. Allow to cool for 30 minutes before breaking it into bite sized pieces.
